My favorite smoothie

I have never been much of a veggie fan.  I have eaten more veggies this past month than the last three years combined.  I still struggle to get in my leafy greens, but when I found out that I could just add some to my fruit smoothies, I was intrigued.  I found that spinach did not alter the taste whatsoever and I could easily get 3 cups of spinach just mixed in with what I was drinking, anyway. 

So here is exactly what I use in my most favorite smoothie.  I sometimes use rice milk but the coconut milk just gives it that really wonderful tropical taste!

First I start off with my liquid ( I found this stuff at Kroger.  I recently found some at Walmart–score!)

Then I add in 3 big handfulls of fresh baby spinach

I use the chop setting on my blender til all the spinach is mixed in with the milk.

Then I add one scoop of protein

2 tbsp Flax **if you aren’t used to so much fiber at once, work your way up to avoid an explosion 😉

and about 3/4 cup of my fruit of choice.  This is my all-time favorite!  I happened to have some from Schwans on-hand but I’ve even found this same fruit combination (peach, mango, strawberry, pineapple) at Walmart! 🙂

I blend it all on the “chop ice” setting so my frozen fruit chunks can be blended with ease.

Bonus–my kids love these, too!  I hate to share mine so I usually just make a lot extra and there is NO other way they will get their green veggies 😛

    it doesn’t look very appetizing, but it sounds delicious!!

      lol that is what Pete just said…I believe his exact words were “ewww that looks nasty” haha. If you can get past the green color, it is really good!

    Your smoothie looks delicious! I want one right now! I’ve been trying to buy more organic foods lately and wouldn’t have even thought to check Walmart for organic coconut milk. Thanks for the tip!

      oops, maybe I should clarify–the coconot milk at Walmart was *not* organic 😦 But I did at least find some there, that is unsweetened and not full of additives, with the Thai foods in the ethnic foods isle.
