Pumpkin Cheesecake French Toast

Yields 6 servings

6 slices bread

6 eggs, beaten

1/2 cup milk of choice

cinnamon to taste

1 tsp vanilla

1/2 cup easy pumpkin pie filling

4 oz softened cream cheese

optional: 1/2 cup chopped nuts

Heat nonstick skillet, may add cooking spray or olive/canola oil to prevent sticking.  In mixing bowl, beat 6 eggs, then add milk, cinnamon, and vanilla.  Dip slices of bread into egg mixture and cook over medium heat til each side is done, about 90 seconds each side. 

For topping:  mix cream cheese and pumpkin either by hand or with mixer til smooth.  Spread on top of each slice of toast; top with nuts, if desired.
