Crockpot Chili

8 0z baby bella mushrooms

1-2 tbsp canola oil

2 cups veggie or chicken stock

1/4 cup whole wheat pastry flour

2 tbsp white wine (I had some in my fridge)

1 cup rice milk (or milk of your choice)

1 Lrg. can tomato sauce

8oz tomato paste

1 lb ground hamburger or turkey, browned

1 lrg. can kidney beans

2 tbsp cocoa

1 tbsp cumin

1 tsp chili powder

1) heat oil in skillet over med-high heat, add mushrooms, sautee 2-3 minutes.

2) Meanwhile, bring 2 cups of stock to a boil.  Add mushrooms, then bring back to a boil, cook for 10 minutes. 

3) Add flour, wisk til blended. 

4) Remove from heat and add wine and milk.

5) pour into crockpot (or if desired, continue cooking over low heat on stovetop)

6) add all other ingredients.  Cook over low heat 6-8 hours

Even better the second day 🙂
